Vegetables and fruits are widely grown in Pakistan, and when they are harvested, they are plentiful, fresh, nutritious, and cheap, so if they are stored at this time, in the off-season. They can be used to the maximum. It is also a good idea to save them for saving. In addition to the season, they can also be cooked to diversify the food.

Can you dry them by spreading them in the sun or using artificial heat?

In both cases, there is a complete digestive tract for vegetables and fruits which are preserved by removing moisture. When the moisture content of these foods is less than 30%, they can be preserved in good condition. For example, wash them in a pot, peel them with a sharp knife, and cut them to your liking.

Now spread it in an open place on a mat or in a tray and then wrap or tie the vegetables in a muslin cloth and store them. Cover it with a gauze cloth to protect it from dust and flies.

How to dry leafy vegetables?

That is, take out fenugreek, spinach, and greens, etc. in boiling water for 3 to 5 minutes or wash the leaves, wrap them in a clean muslin cloth and put them in boiling water, they will be safe for a long time.

Turnips, potatoes, carrots, bitter gourds, and cabbage can also be dried. Wash and peel these vegetables and cut them into appropriate pieces. Separate the cauliflower flowers, then wrap them in a muslin cloth and put them in boiling water as follows.

Bitter gourd 1 minute, peas 3 minutes, turnip 5 minutes, cabbage and cauliflower 6 minutes, carrot 6 minutes, potato 10 minutes. It is better to take these vegetables out of boiling water and wash them with cold water.

After removing them from the water, spread them in the sun on a clean tray with a clean cloth, and cover with gauze. Keep turning upside down daily, this way the vegetables will be dry in three or four days.

Store vegetables in a dry state:

These dried vegetables can be stored in glass jars. Put the peas in a plastic bag and cover its mouth with a candle flame. So that they can be safe for a long time.

Cook Dried Vegetables Whenever you want to cook these vegetables, soak them in lukewarm water for 30 minutes. So that they absorb water and become soft. Now cook them in any shape you want.

The right way to dry Bitter Gourd:

Put the Bitter Gourd in a plastic bag and wash them with clean water. Cut them in half with a sharp knife and remove the seeds. After removing the seeds, salt them and keep them. It is better to keep them in the sun.

Now squeeze the salted Bitter Gourd with your hands and remove their bitter water. Then wash them together with plain water and wrap them in a clean muslin piece. Fill a separate pot with water and bring to a boil. Put a bundle of Bitter Gourd in boiling water for one minute and remove. Now soak the Bitter Gourd in a solution of potassium met bisulfite for half an hour and hang it in a high place. So that all its water is gone.

Now clean a tray or mat and spread these Bitter Gourd in the sun. Be sure to cover the mesh on this tray. Bitter gourds will dry out in three to four days, but keep turning them upside down every day. When dry, store them in a jar. Take them out when needed, wash them, and use them in food preparation. In this age of soaring inflation, we must manage our personal and domestic resources well, and in fulfilling this responsibility, it is equally important to cultivate a sense of ‘pride’ and greatness in hard work.
